Chicken Tray bake

The simplest meal you could make! A one pot meal with minimum effort that is packed with lots of flavour.


This is easily one of my fave things to make at home when I haven't got the energy to do much else. Sometimes I use fish and sometimes I use chicken but both give an equally tasty result. The beauty of this dish is also that you don't really need to do much prep or washing up. All you need is a knife and chopping board and your baking dish.



Another great thing is that you don't have to think about sides or anything of the sort. Everything is literally in one dish.


Serves 4

  • 4 chicken quarters

  • 500 grams of potatoes, cubed

  • 1 large onion, cut into large chunks

  • 1 large lemon

  • 2 large tomatoes, coarsely chopped

  • 100 grams french beans or asparagus, trimmed

  • 5 garlic cloves, minced

  • 1 bay leaf

  • A handful of torn sage

  • 1/4 cup cooking oil

  • Salt to taste

  • 1/4 cup balsamic vinegar

  • 50 grams unsalted butter

  • 250 ml double cream (optional)

Pre-heat your oven to 180°C.


Start by prepping the chicken. Squeeze the juice of the lemon into a bowl. Add to it some salt and black pepper and the double cream and mix well. Then add the chicken and massage it in the marinade. Leave it in for a few minutes as you prep the vegetables.


Do not throw away the squeezed lemon, cut it into quarters and set aside.


To prep the veg, add all your vegetables into the baking dish. Add to this some oil, salt, sage, bay leaf, garlic, the lemon pieces and balsamic vinegar. Use your hands to mix everything together then take your chicken pieces and put them over the vegetable. Pour the marinade over everything and then cover your baking dish with some foil.


Place your dish into the middle shelf of the oven and let it bake for 45 minutes to an hour. To check the doneness of the chicken, prick it with a knife close to the bone and the juices running should be clear. Any red or pink means the chicken isn't ready.


If the chicken is ready, turn up the heat in the oven and switch to the grill to broil the chicken for about 10 to 15 minutes to give it some colour. Once browned, you're ready to serve.
