Cheats Tiramisu

You read right, this is a cheat’s recipe 😊😊. None of the fancy shmancy with the custard and/or brandy. I wanted to make this as easy as possible for you and for me.

I made this for my mum and, I’ll also admit, for myself because I was craving a nice dessert at home. Popped into the local supermarket, grabbed what I needed and made the dessert. Mind you, this was on a Sunday morning. I came back home in the evening expecting as you do, to find dessert waiting.

Lo and behold, my mum and son had inflicted some proper damage and I found a small portion left. At that point I think I was just happy they had left something.

So, since they enjoyed it, I figure you will too. It’s simple enough and a tasty crowd pleaser.

Serves 4

  • 100g lady fingers

  • 300 grams mascarpone at room temperature

  • 40 grams icing sugar

  • 50 grams dark chocolate

  • 2 cups espresso or strong black coffee

Special equipment

A small, shallow rectangular dish (Or something that the tiramisu can easily be layered in)

One of the most important things about this recipe is speed. You need to be quick as you dip the ladyfingers into the coffee

*Tip: put your coffee into a bowl. This makes it easier to dip and twist the lady fingers.

Pour your coffee into a shallow but wide bowl and next to this, have your dish for the tiramisu. Take the ladyfingers and very quickly dip them on one side and twist to get the other side moist as well. Do this with enough ladyfingers to cover the bottom of your dish.

Next, take out your mascarpone and place it into a bowl with the icing sugar. Gently mix this together. Your mascarpone should loosen up to the consistency of a heavy custard. Pour half of this over the ladyfingers and grate half of the dark chocolate evenly over the mascarpone layer.

Repeat the above steps then put the tiramisu in the fridge to set for a couple of hours before serving.
